Southern Distilling Company, Statesville, NC.  Southern’s Co-Founder and COO, Vienna Barger, knew she loved wheated bourbons, so when they started to lay down barrels, they found and perfected a wheated mashbill they loved.  This 5 year old bourbon was a unanimous favorite from the tasting panel, so much so, there was no debate that this barrel was THE barrel for the Southern Distilling Peacock Preferred Bottle Club.

Southern’s location in North Carolina was a center for distilling in the 19th century, with thousands of farmer distillers creating spirits from their grains. Vienna and her husband Pete pay homage to that history by sourcing local grains as much as possible and are committed to supporting their local community.  Southern’s trajectory continues upward as they’ve expanded to fill a need for contract distilling to other brands. But more importantly, they remain focused on creating delicious, high quality whiskies under Southern Distilling’s brand. This barrel is proof of that.

Rich vanilla bean and almonds on the nose are joined by with some sweet hay, old wood, and leather, redolent of an old barn on a warm day on the palate. Fruit is mostly in the background, but does appear as raisins and chocolate covered cherries. These are balanced with some cinnamon, black pepper, and roasted almonds. This elegant bourbon has a rich mouthfeel and a long, complex finish.

The proof is a deceptively smooth for its proof of 111.6.  Its mash bill is 70% corn, 16% wheat, and 14% malted barley. It has an age statement of 5 years and 170 days.
