For Peacock Preferred Bottle Club Members Only: Announcing our 2nd selection of the 2023 Peacock Preferred Bottle Club, this time from Laws Whiskey House – a favorite among Bourbon Women. Now available for purchase, a limited quantity of single barrel selections from Laws Whiskey House, located in Denver, Colorado, and known for its high-quality whiskeys distilled from corn, rye, heirloom wheat, and barley sourced from two Colorado family farms. Laws mills, cooks, and ferments its grain on site and distills in a custom-made four-plate pot still. In addition to its signature Four Grain Bourbon, Bottled-in-Bond Four Grain Bourbon, and San Luis Valley Rye, the distillery has had several limited releases.

The Peacock Preferred tasting team selected two barrels from Laws, one bourbon and one rye. Both delicious.

The first a bourbon, clocks in at 116.1 proof and aged for more than 10 years. It has the signature Laws four grain mash bill: 60% corn, 20% heirloom wheat, 10% heirloom rye, and 10% heirloom malted barley.  Rich caramel, toffee, caramel corn, dark honey, candied dates, warm cedar, sandalwood, and clove comprise the complex medley of aromas emerging from the glass. It is every bit as complex on the palate with additional notes of orange zest, graham cracker, chocolate, roasted pecans, and dried apricots, all exhibited with a wonderfully rich mouthfeel. The long finish finally ends with a dash of cinnamon.

The second, a rye, sits at 120.7 proof and has been aged for 4 years and 2 months.  It presents with aig floral nose, brimming with dried wildflowers, honeysuckle, dark honey, butterscotch, and autumn leaves. Dark fruit – dates, raisins, figs, plantains – with cardamon, sea salt, and honey, all melted together with a silky mouthfeel. The finish exhibits lots of oak and pepper, which are smoothed with a little water.

Peacock preferred members will be notified via email of the availability of the selections, the membership link to the bottles and the password to the Peacock Preferred shop.  At this time, purchasing is open to Peacock members only. If bottles remain once all Peacock members have purchased, general bottle purchases will be opened to the public.
